Delicious alliteration

I’ve been eating terribly lately, but I made an effort here. It actually turned out pretty great!

Salmon is chipotle & lime, with cilantro crema, peperoncini & scallion on top, seared in a cast iron pan with a little butter

Salad is field greens, fresh basil & oregano, cucumber, blue cheese, roasted beets, strawberries, almonds, and a bit of balsamic vinegar

They might not classically go together, idk, but they made me happy

Oh man I absolutely feel this.

I’ve been self employed WFH for almost 20yrs now and the lunch-alone struggle has not gotten easier.

When I do make the effort though, it’s usually worth it.

Lately I’ve been in a rut where, if I get up from my desk at all, it’s to forage, not prepare a meal. Like, I’ll call a fistful of peanuts or a banana lunch, or some cold fridge meat with mustard and no plate. It’s depressing.

When I make something colourful and intentional, though, I always feel better. It forces me to get my head out of work mode and take a break, and it’s satisfying to make something that looks and tastes nice. I feel more like a person too, if that makes sense. Not to mention my brain works better when I actually feed it real food, heh

Like anything, it’s just starting that’s the hard part.

Good insights! Yeah if it gives you a mental/emotional boost then it's pretty worth it, especially since that'll translate well to the rest of your day.

Why I asked my original question is because I'm currently on those meal kit things, and the one I'm subscribed to sends the food fully cooked and ready to eat, you just have to pop it in the microwave. And it's pretty tasty stuff, doesn't look too preprocessed. But it does get expensive. So I was considering the alternative of cooking daily to save money, which sounds funny because 99.9% of people probably do that.

And I'm kinda on the fence about meal prepping because the idea of eating the same thing a few days in a row doesn't really appeal to me.

I guess I'll find out this week which is more sustainable for my situation!
