If you go to the woodlands stable, just a little north of Hyrule Castle, you'll find a Great Fairy who can upgrade your armour. That should help you survive a little longer.
Additionally, there are several ponds, both in the sky and the surface, where you can find regular fairies. Sneak up to them slowly to collect them, and then you have a safety net against instant death.
In the depths, try and gather as many puffshrooms as you can. These explode into a cloud of spores on impact, and enemies within will lose sight of you. Then run behind everyone and sneakstrike them, and that will take out most standard enemies. If need be, it also makes it easier to flee.
Phew, but activating the fairies is rather involved
and now fairies have a fee for upgrading. 😫
They did what! As if dragon scales weren't enough hell to deal with
Yeah, but now you don't have to spend rupees to open their buds. The 4th great fairy in BotW was 10,000 rupees to open! Now you pay per upgrade. The first upgrade for each piece is only 10 rupees, then 50, 200, 500. It adds up, for sure, but if you only upgrade a couple of sets to level 4, it's cheaper than it was in BotW. The material costs are more of a chore than the rupee costs.
inflation hit hard on Hyrule. 😩
Its a lot harder than botw's pay up
