Are you aware of KDE connect? It can do clipboard sync, and more. Also available on Windows.

I looked into a bit more, and the fact that I can put it on top of an S3 compatible filesystem, with encryption and deduplication, is huge. I am seriously considering it as a backup system now.

That's a great feature! Currently I am way too invested in Nextcloud ecosystem to try anything else. But if I ever want to leave Nextcloud for a simple webdav server, this will be my consideration!

When people say degoogle, most of the times what they mean is they want to use software (preferably free and opensource) that respects their privacy. How does switching to ios help with that? You are jumping from Google's ship to Apple's and your hardware is going to be even more restrictive. And all the proprietary services OP has to use now (like Instagram) will remain the same in ios. So I don't see how switching to ios solves OP's problems.

If you're satisfied with it, you don't need to update. But Openboard lacks a lot of features many people want. The biggest of them is probably the glide typing, which Heliboard supports. And it also added a lot of quality of life improvements.

Even though Sav is good, you should know that it has serious security vulnerabilities, which is most likely not getting fixed anytime soon https://github.com/Sav22999/sav-pdf-viewer-pro/issues/28

Many other FOSS PDF viewers have this issue as well. For this reason, I would recommend using MJ PDF reader.

Semantic Scholar is the closest I found to be a replacement of Google Scholar, and in so many ways it's better.
