That's exactly the kind of advice I was looking for, thanks! I've built machines before, I just get lost in the compatibility of MBs and components so I'm grateful for the pointers. Also worried about room in the box, but I think I have it right. Just need to triple check the dimensions of the GPU and that the case has space for two 2.5" SSDs.
Great point! I'm not doing anything super-intensive in terms of development, but current build does get close to the limit when I'm writing music. Easy enough to add more like you said.

I really miss small phones. Used to be a time when manufacturers were competing to make them as small as possible and Dell's 5" phone was universally mocked as too big.
Keep is also a Progressive Web App (PWA) which means you should be able to install it from your browser's menu, without needing a native app and irrespective of your phone's OS (iOS or Android).
Just go to https://keep.Google.com and then check if your browser menu has an "Install" option.
