I'm never sure exactly how this works. If I have for example a +5 weapon and a +1 RoF, does Brawler's Stance use the lower values of the RoF or does it add the RoF to my existing weapon?

At the moment I have a Champion who has +4 Greataxe (9-69 dmg) and a +2 RoF (8-48 dmg). Is it worth using Brawler's Stance or will it be less than the Greataxe?

Brawler stance ignores your weapon damage values. It allows you to have an enchant while using a RoF.

So I'm better off just using my weapon without Brawler's Stance unless I want the enchant?

It's useful for when you carry say, a shield or other "Non ideal" weapons but still want to be able to use their effects.

Dagger type weapons (invisibility) comes to mind
