I heard a lot about him and his works and I was always fascinated by his drawings but there are a lot of collection of his short stories (I don't know if it's the proper way to call them but you got the point) so I was wandering which was the best one for someone who never read anything about him

If you've ever seen that "This is my hole" meme, the story Enigma of Amigata Fault is where that originated from. A personal favorite of mine is Long Dream. And a longer series of overarching stories called Uzumaki is great as well.
