How do you do the vegan chicken? Is it seitan? I've tried making my own before but it never comes out quite right. I'm a carnivore, my wife is pescatarian; I'm always looking for vegetarian or, y'know, vegan-adjacent meals we can both enjoy. (This is partly because I just plain don't care enough to cook separately for myself; I'll make whatever she likes because I care more about that.)
It was just a quick lunch – the chicken was store bought with soy protein and seitan.
Yes, seitan is not so easy to make from scratch. It's easy to screw up the texture. An easy and not so expensive substitution for chopped chicken can be soy chunks: You boil it in stock and then you marinate it and fry it in the pan.
